Baby Arugula
Summer Squash
Zucchini
Scallions
Salad Turnips
Lettuce
Kale or Chard
Basil, Cilantro, or Dill

TRY THIS SUPER EASY RECIPE for Roasted Zucchini & Summer Squash

Preheat oven to 475.
1. Slice squash lengthwise into 1/4 inch thick slices.  2. Lay out in a single layer on a baking sheet, and brush with olive oil on both sides.  3. Sprinkle with salt, a little chopped basil, and a little grated parmesan.  4. Roast on top rack in oven at 475 for 8 to 10 minutes.  5. Gently flip squash over with spatula and sprinkle with a little more parmesan. 6. Turn oven to Broil. Put back on top rack for 2 or 3 more minutes. Enjoy!
