Joanne’s Carrot Soup
Ingredients: 1 lb carrots, grated, 1 – 2 tsp diced ginger, 2 cups soup stock of your choice, salt & pepper to taste. Optional additions: add a little milk for a creamier soup; add a few diced potatoes for a thicker soup.
secret to this super quick and easy soup is grating the carrots so they
cook quickly! Simmer gently until the carrots and ginger are cooked
through and some of the liquid has evaporated. Puree in the food
processor until smooth. Serve with a dollop of yogurt or cashew butter.

storage vegetables as well as fresh greens and herbs. Late season shares
typically include winter squash, pie pumpkins, potatoes, root crops,
red and yellow storage onions, and shallots, as well as leeks, cabbage,
kale and other cold hardy greens, salad greens, and herbs. We are also
working on sourcing some additional items from our friends at other
local farms, including garlic and dried beans. Pick up dates are
Thursday November 1 and Thursday November 18, 3:00 – 6:00pm. This share
